Pie Recipes #216 - Coconut Cream Pie (A different version)



Coconut Cream Pie

1 1/2 c. milk

Pinch salt

1 c. sugar

Little brown sugar

3 tbsp. flour, level

3 egg yolks

1 tsp. vanilla

Coconut to taste



Cook to pudding consistency. Put small amount of coconut in bottom of baked pie shell and pour pudding on top. Make meringue out of the 3 egg whites and brown under broiler.

Pie Recipes #215 - Fried Chocolate Pies



Fried Chocolate Pies


2 cups sugar
1/4 cup coca
4 heaping Tbsp. cornstarch
2 cups milk
1 Tbsp. butter
1 tsp. vanilla

Stir first three ingredients until mixed throughly. Add milk. Cook until very thick. Add butter and vanilla. Stir constantly. Refrigerate. This must be cold.

Crust

2 tsp. salt
1/2 cup milk
1/2 cups Wesson oil
2 3/4 sifted all-purpose flour
Mix flour and salt. Pour Wesson oil into 1 cup.(measuring) Add milk (DO NOT MIX). Add all at once to flour. Stir until mixed. Shape into balls. Place between two 12-inch squares of waxed paper(dampen table to prevent slipping). Roll into 1/2-inch thick. Peel off top paper. Cut 5-inch squares or circles. Place a large spoonful of filling on each circle. Fold over filling to make a half circle. Seal edges with fork dipped in flour. Fry 4 to 5 minutes in 1-inch Wesson oil.

3 c milk
2 pkgs. instant French vanilla pudding
8 oz cool whip
1 box graham crackers
2 T cocoa
2 T margarine
2 T light Karo syrup
2 T vanilla extract
2 c confectioner's sugar

Mix milk and instant pudding mix; add cool whip. Line an 11x13 pan with whole graham crackers. Cover with 1/2 the pudding mixture; add another layer of graham crackers; cover with the remaining pudding mix; and cover with a final layer of graham crackers. In a saucepan on low heat melt margarine with cocoa, syrup and vanilla; add sugar; add milk as needed to thin. Pour over crackers; refrigerate.

Cherry Vanilla Ribbon Pie

1 baked pastry shell -- (9 or 10-inch)
1 package cream cheese -- (8 oz) softened
1 can Sweetened Condensed Milk (NOT EVAPORATED MILK-- (14 oz)
3/4 cup cold water
1 pkg instant vanilla flavor pudding mix
1 cup Whipping Cream -- whipped
1 can cherry pie filling -- (21 oz) chilled

1 In large mixing bowl, beat cheese until fluffy; gradually beat in sweetened condensed milk until smooth.
2 On low speed, beat in water and pudding mix until smooth.
3 Chill 10 minutes.
4 Fold in whipped cream.
5 Spread half the pudding mixture in prepared pastry shell; top with half the cherry pie filling.
6 Repeat.
7 Chill 2 hours or until set.
8 Refrigerate leftovers.

Pie Recipes #212 - Texas Pie Recipe - Pie Recipe with Cherries and Coconut



TEXAS PIE RECIPE
This recipe, submitted by Linda, is an easy way to make a delicious dessert for your family!

2 cans cherry pie filling
1 large can crushed pineapple, drained
1 box yellow cake mix
1/2 c. chopped pecans
2 sticks margarine
1/2 c. coconut

Place pie filling in 9x13 pyrex. Sprinkle dry cake mix evenly overfilling. Sprinkle coconut and pecans over cake mix. Pour meltedmargarine over all. Bake at 350 degrees for 40 minutes. Takes only 1pan.

1/4 c. butter, softened
2/3 c. sugar
2 eggs
3 tbsp. Flour
3/4 c. evaporated milk
1/4 c. water
1 tsp. Vanilla
Nutmeg
1 unbaked pie shell

Cream butter, gradually add sugar, beating well. Add eggs and flour.Mix well. Stir in milk and water and vanilla. Pour into pie shell.Bake 20 minutes at 400 degrees then reduce heat to 300 degrees for15 more minutes.
